I need to do my Blog Up-Dates this week

I have been so Busy I haven't been keeping up with my blogs (SORRY) I do have a Craft Fair next weekend so I have been flat out knitting for that and getting Felicia to help me make me other FuN Crafts to sell :) I have done a few Card Classes that I am really enjoying, plus a few Layout Classes (Scrapbooking) And last Saturday I did the Create For A Cause all day(Scrapbooking mainly) and that was lots of Fun! I went with Danna and Felicia :)

Scotch Eggs

Scotch Eggs

1/2 lb (250g) sausage meat
4 hard boiled eggs, shelled
flour
large pinch chopped mixed fresh herbs, or dash of Worcestershire sauce
salt and freshly ground black pepper
1 egg, beaten
dry breadcrumbs, or a large pack of crushed crisps, or peanuts, finely chopped
oil for deep frying

Serves 4

Dust the eggs with flour. Mix the herbs or Worcestershire sauce and the salt and pepper into the sausage meat and divide into four equal portions. Lightly flour your hands and the worktop and flatte each piece of meat until it is about the size of a saucer. Wrap each piece around an egg, moulding to fit. Make sure the meat is of even thickness and there are no cracks. Coat the balls in the beaten egg, then in the breadcrumbs, crisps or peanuts. Heat a frying pan of oil until it is hot enough to brown a cube of bread in about 30 seconds, or to 360F (180C). Add the eggs and cook for 7-8 minutes until golden brown and crisp. Remove and drain on absorbent paper.

I LOVED the first book... Casting Spells and have been waiting for the 2nd book to come out, and yesterday I came across it at Chapters Book Store so of course I bought it :) I plan to read this book next!

Scones

Made Scone's this morning, here is the recipe from my Edmonds Cookbook.

3 cups Flour
6 teaspoons baking powder
1/4teaspoon salt
75 g butter/or...4 1/2 Tablespoons
1-1 1/2 cups milk


sift flour baking powder and salt. Cut butter in until resembles fine breadcrumbs. Add milk and mix to a soft dough. Knead a few times. Lightly dust an oven tray with flour. Press scone dough out onto this. Cut into 12 even sized pieces or cut with a cookie cutter. brush tops with milk. Bake at 220 C or 425 F for 10-12 mins or until golden brown.

Writing in my Journal!

I have been trying to write in my Journals daily or at least 3-4 times a week, I use to always write in them everyday before I went to bed, but life just seems to take over and I never find the time, so I am making an effort to write on a regular basis, I have always kept a journal since I was about 10 years old, it helps me to unwind and think things through.
I have decided to start each journal entry with a Quote, and then once a week do a list of 5 things I am thankful for/blessings... I also will pick a word of the week that is some how relavent to me or my life and work on that word as a positive result in my life!

Had a Busy few weeks Knitting...
